THE WINERY: 90 000 HECTOLITERS OF WINE – 4 DENOMINATIONS


OUR JOB IN THE WINERY

With 1200 hectares of vines, “Les Vignerons de la Voie Romaine et du Cabardès” produce an average of 90 000 hectoliters of wine in four different denominations :

  • AOP Cabardès,
  • IGP OC,
  • IGP Cité de Carcassonne,
  • IGP Cathare.

The IGP wines are essentially single varietals, the other wines in our range are made from a blend of grapes. The annual conditioned production is 200 000 bottles and 20 000 Bag in Boxes.

SEASONS

Work in the winery changes with the seasons. Harvest time (September-October) is a crucial moment and determines the quality of the vintage.

After the harvest, the winemakers prepare the blends in our inhouse laboratory along with each different wine in our range available in bottles or Bag in Boxes.

The team at the winery work hard to enable us to produce and deliver within the year, the wines selected by our clients.

The time from January to March is devoted to conditioning the new wines. Preparing the wine for bottling is a very important part of the process: fining, stabilising, filtering.

 

We are proud to present our new vintages with smart packaging, as well as fresh and smooth flavours.
